Keto Coconut Flour Pancakes
KETO COCONUT FLOUR PANCAKES

Grassfed butter and ghee contain conjugated linoleic acid (CLA), which has been shown to aid in weight loss by promoting the reduction of belly fat and aids in muscle growth. When trying to lose weight, it’s important to maintain or increase lean muscle mass to prevent your body’s metabolic rate from decreasing. CLA also protects against cancer by helping fight off tumor activity and slowing the growth of cancerous cells.
1/4 cup ghee or coconut oil, melted
1/4 cup full fat coconut milk
1/4 tsp sea salt
4 pasture raised eggs
1 tsp vanilla
1/4 cup coconut flour
1/2 tsp Baking Powder
4 scoops Vital Proteins Collagen
Extra ghee or coconut oil for the skillet
Chopped nuts, cinnamon and coconut butter or ghee for serving
Note: Add 2 slices pasture raised bacon to ensure you are hitting your protein goals!
In a blender, combine all ingredients for the pancakes and blend until smooth. Heat ghee or coconut oil in a skillet over medium heat. Pour about 1/4 cup batter per pancake into heated skillet and cook 2-3 minutes until bubbles rise to the surface and edges are lightly browned. Flip and cook additional 1-2 minutes on other side. Repeat with remaining batter. Serve warm and spread with extra ghee or coconut butter. Sprinkle with cinnamon and chopped nuts of choice.
Makes 8 small pancakes or 4 servings
