Nourishing Tomato Basil Soup
NOURISHING TOMATO BASIL SOUP
FOOD AS MEDICINE:
Tomatoes are jam-packed with vitamins A, B, C, and K. They also contain high levels of potassium and chromium, which aid in stabilizing blood sugar and ward off those pesky sugar cravings. Tomatoes can be eaten in a variety of ways, both raw and cooked. Eating them both ways provides for the best balance of nutrients. This soup uses bone broth as a base to support the immune system and aid in repairing leaky gut.
4 cups bone broth
8 cloves garlic, crushed
1 13.5oz can full fat coconut milk
½ tsp sea salt
Cracked black pepper to taste
2 handfuls of basil leaves, chiffonade
Heat broth, add garlic, tomatoes, coconut milk and sea salt. Simmer 10 minutes on low, then pour into blender and blend until just combined. Pour into bowls and top with black pepper and basil.
