This peppermint panna cotta is one blender miracle dessert that makes for an amazing after dinner treat without the guilt. It is light and fluffy in texture and super rich thanks to the raw cacao, which also boasts one of the highest antioxidant contents of all foods and is incredibly rich in magnesium to support full body relaxation. This can be made keto friendly by cutting the maple syrup in half or omitting it altogether and allowing the natural sweetness of the coconut milk, vanilla and peppermint to come through (promise is still tastes amazing!) The addition of gelatin not only allows this little guy to set to the perfect consistency, it also supports gut health which can be impacted by holiday celebration and overindulgence in alcohol or sugar and helps to heal leaky gut, reducing food sensitivities and inflammation on a whole body level. Gelatin is also incredibly supportive of hair, skin and nails as well as joints and cartilage!
