Spinach Artichoke Dip

This spinach artichoke dip is the perfect indulgent dish to bring to your Super Bowl party to stay fat-fueled through the big game! Spinach is high in antioxidants including lutein and zeaxanthin known to support vision and eye health. It also is high in neoxanthin and violaxanthin, carotenoids shown to protect cells from mutations and tumor growth. Spinach is also a good source of Vitamin A and C, manganese, zinc and selenium and is one of the best dietary sources of magnesium. This is a great option to rotate with other leafy greens such as kale, swiss chard, lettuces, arugula and beyond to fulfill your 2-3 cups leafy greens per day requirement in my real food keto program!
3 Tbsp butter
2 cloves garlic peeled and chopped
1/2 white onion, diced
12 oz baby spinach
1 glass jar artichoke hearts, drained
8 oz full fat cream cheese
1/4 cup parmesan cheese, shredded
1 cup cheddar cheese, shredded
1/4 tsp salt
1/8 tsp black pepper
1/4 tsp red pepper flakes
Preheat the oven to 350. Melt the butter in a cast iron skillet, then add the garlic and diced onion along with a pinch of sea salt. Cook down until the onions are translucent, about 5-6 minutes. Add the spinach and cook down until wilted.
Place the spinach and cooked garlic and onions in the food processor and pulse a couple of times. Add the artichoke hearts and pulse until just chopped. Pulse in the cream cheese and shredded cheese until just incorporated. Add salt and pepper to taste as well as red pepper flakes.
Spread the mixture in a cast iron skillet or oven-safe baking dish and bake for 20-25 minutes. Serve warm with vegetable crudite.
