Pumpkin Cashew Queso

We often think of sweet when it comes to pumpkin season–pumpkin pie, muffins, bread, pumpkin spice lattes and the list goes on, but going savory with pumpkin can add amazing richness of flavor and creamy texture! This Pumpkin Cashew Queso uses a base of soaked cashews and organic canned pumpkin as a dairy free dipping option to pair with the season’s football games, family gatherings and beyond. Nutritional yeast is an ingredient we might remember from our vegan days (yes even me), and it can still be a good option if looking for a cheesy flavor and trying to maintain dairy free. It is important to check that your nutritional yeast is NOT enriched with synthetic B vitamins as this can mess with your hustle and mood! This option on my Amazon Store does not use synthetic B vitamins so would be safe for MTHFR genetic mutations.
INGREDIENTS
1 Tbsp avocado oil
1/4 yellow onion, diced
2 cloves garlic, minced
1 cup cashews, soaked in filtered water 2-4 hours
1 cup organic pumpkin puree
1 tsp sea salt
1/3 cup nutritional yeast (non-fortified!)
2 Tbsp pickled jalapenos, chopped, plus more for topping
1 Tbsp apple cider vinegar
2 tsp coconut aminos
1/2-1 cup filtered water, to thin
DIRECTIONS
Heat the avocado oil in a cast iron skillet over medium heat. Add the onion and a pinch of sea salt and cook, stirring occasionally, until translucent. After about 5-6 minutes, add the garlic and reduce the heat to medium low so as not to burn. While the onion is cooking, place the cashews, pumpkin puree, salt, nutritional yeast, jalapenos, ACV and coconut aminos in the blender and blend, adding water 1/4 cup at a time as needed to thin, about 2 minutes. Check for seasoning and adjust as needed. Pour this mixture into the cast iron with the onions and garlic and stir to distribute. Heat over medium low until bubbling. Serve with vegetable crudite of choice and top with chopped jalapenos. Note: this can be reheated in the oven and the flavor gets even better on the second day if making ahead for a gathering!
